Vegetable Skewers

Serving Size: 1 skewer



Bell Pepper, cut into squares

1 whole

Zucchini, sliced

1 whole

Summer squash, sliced

1 whole

Red onion, cut into squares

1/2 whole

Cherry tomatoes

1/4 cup

Balsamic dressing, fat free

1/4 cup


  1. Pre-heat grill to medium heat.
  2. On metal or wood skewers, thread on the various vegetables.
  3. Brush the vegetables lightly with the balsamic dressing.
  4. Cook for 5 minutes, then rotate skewers 180° and cook for an additional 5 minutes.
  5. Have additional balsamic dressing for dipping, serve warm and enjoy!
