Stuffed Tomatoes


Recipe Serves: 4-5

Serving Size: 1 Stuffed Tomato



Tomatoes, Medium-Large, On the Vine

4-5 Whole

Grilled Chicken, Shredded

1 cup

Celery, Chopped

2 Stalks

Bell Pepper, Chopped

1 Whole

Non-Fat Plain Greek Yogurt

1 cup

Ranch Mix

2 tbsp


  1. Wash tomatoes. Cut the tops off of the tomatoes and scoop out the insides, leaving the tomato intact. Set aside.
  2. In separate bowl, add chopped celery, chopped bell pepper, shredded chicken, Greek yogurt and ranch seasoning. Mix together.
  3. Scoop and stuff the mixture into each of the tomatoes and enjoy!
