Chicken Quinoa Chili

Serving Size: 3/4 cup



Grilled Chicken Breast

1/2 lb

Quinoa, uncooked

1/2 cup

Canned Fire Roasted Tomatoes

30 oz

Low Sodium Black Beans, rinsed and drained

15 oz

Canned Diced Green Chile

4  oz

Onion, Chopped

1/2 Onion

Green Bell Pepper, Chopped

1 Whole

Garlic, Minced

3 Cloves

Chili powder

1 tbsp


1 tsp


1 tsp

Cayenne Pepper

1 tsp


1-2 cup

Lime Juice, as desired




1.  Add all ingredients into a 7-quart slow cooker and cook on low for 8-10 hours.

  • Serve warm, top with low fat cheese and lime juice to brighten flavor. Enjoy!
