Blended Black Bean Soup


 

Recipe Serves: 6-8

Serving Size: 3/4 cup


Ingredients

Amount

Canned black beans, low sodium, not strained

30 oz

Yellow Onion, Chopped

1/2 medium

Habanero Pepper

1 whole

Canned Green Chiles

4 oz

Cumin

1 tsp

Chili Powder

1 tsp

Paprika

1 tsp

Water

1/2 cup


Instructions

  1. Add all ingredients into a 7-quart slow cooker.
  2. Cook on low for 8-10 hours.
  3. Pour contents from crockpot into a blender and puree until smooth.
  4. Pour soup back into crock pot to keep warm.
  5. Top with avocado and Pico de Gallo and enjoy!
